sunday breakfast: spinach pancakes.

sunday mornings as our sweet family of three is one of my favorite moments during our week. we try not to be in too much of a rush and take the morning together enjoying each other’s presence as all other mornings are basically a rush, grab, go kind of deal. recently, i read a post on the honest co. blog about spinach pancakes and i knew i had to try it. sweet e is a great eater but let’s be honest.. greens are just not one of her favorite things. so i adapted this recipe to get some veggies in this morning and and it was an hit all around the dining table!


i adapted the recipe because i needed something super super simple so the recipe below only calls for 5 ingredients.

also, i try to minimize the amount of.. stuff.. we have in our cozy abode so the only blender we have is the nutribullet. so this recipe is super convenient because it all fits into the nutribullet and make cleanup a breeze!


SPINACH PANCAKES {adapted from this recipe here.}
serves ~4.

this recipe will make sweet pancakes.. tbh we don’t even add syrup to ours! 

2 bananas (about 1 cup mashed)
2 large eggs
1 cup flour
1 cup milk (we used 2% because that’s what we have at home for sweet e)
3 cups lightly packed baby spinach
butter (to coat the pan) 

1. add all ingredients to your nutribullet and blend until very well combined! (45-60 seconds). I stopped and shook the batter once or twice in between the blending to get everything mixed up super quick. the batter should be smooth.
2. warm your griddle (or in my case frying pan) and coat with a touch of butter.
3. pour small rounds of batter onto the hot surface and let cook until bubbles form on the surface and the surface is mostly set, about 2-3 minutes.
4. flip and cook for an additional minute or two, or until fully cooked.
